Guacamole and Raw Salmon Burger.


As you may know, Kama and I have a sort of tradition: making burgers for our birthdays. This year we delayed Kama's birthday lunch and eventually celebrated it nearly two months afterwards. But still it was great. I've decided to change our habits and replaced the steak by a salmon tartare and not to add cheese. The result was very fresh and agreeable.




Ingredients:

for 2 servings


- 300g fresh salmon
- half a lime
- chopped dill
- pepper

- 1 1/2 ripe avocado
- half a lime
- chopped chives
- salt and pepper

- 1 big onion

- tabasco

- 2 buns

1) Dice the salmon. Incorporate the lime juice, dill and season with pepper. Refrigerate the tartare.
2) Puree the avocado. Incorporate tthe lime juice, chives and season. Refrigerate the guacamole.
3) Slice the onion. Fry in boiling oil until the rings are golden brown and crispy.
4) Heat the buns in the oven.
5) Dress the burgers, season with tabasco if needed, and serve immediately with the French Fries. Don't wait too long, otherwise the salmon will cook in the hot bun.
