Smoked Salmon and Avocado Lasagna.
Christmas and New Year's eve are over which means we all have tons of leftovers in our fridges : turkey, foie gras, smoked salmon... -french "celebration" leftovers-.
So a few weeks ago B and I had our "traditional" Christmas dinner -except that it wasn't for dinner and that it lasted all day- and we ate a lot of food but that was for a good cause because when you do the math the more we eat the more recipes we post and that's why we don't feel too guilty for what we eat. In fact we're not that greedy, we just like to share and it would be a disgrace to share things we haven't tasted.
Anyway, I first tried this recipe last year for a birthday and I was so satisfied with the result that I promised B that I would do it again for her but I couldn't really find the right moment because it's not like I have quality smoked salmon in my fridge everyday.
This is an easy recipe and a great alternative to classical lasagna!
6 lasagna sheets
6 slices of smoked salmon
1 tbspoon olive oil
1) Boil 6 lasagna sheets in salted water for about 15 minutes.
2) Meanwhile marinate 6 slices of smoked salmon in the juice of 1/2 lime and of 1 clementine.
3) Smash 3 raw avocados with the other half of the lime, a pinch of salt, a pinch of pepper and 1tspoon dill
4) Drain the lasagna sheets and dry them with paper towel.
5) Sprinkle dill over the slices of smoked salmon and smear olive oil over the lasagna sheets.
6) Assemble the lasagna by alternating layers of lasagna sheets, smoked salmon and avocados.
7) Cut the Lasagna and stack the two halves (or else your lasagna will be flat...)
8) Sprinkle a last pinch of dill on top.
